Heating chocolate in a stainless steel fondue pot with ceramic insert?

I recently purchased a stainless steel fondue pot with a ceramic insert. I've heard that the ceramic insert is better for melting cheese and chocolate while not burning. I also read that a tea light (or other small candle) is sufficient for keeping chocolate fondue melted, in general, and also avoids burning it. However, no place I look talks about doing both at once, i.e., putting the chocolate in the ceramic insert, which sits in a water bath inside the actual fondue pot, while only heating it with a candle. Would the chocolate still get enough heat to stay melted, or should I just use normal fuel to heat the fondue pot with the water bathed ceramic insert?Heating chocolate in a stainless steel fondue pot with ceramic insert?
The tea light should work fine if your chocolate is already melted when you put it in the water bath. I would recommending using warm water to hot water in your water bath. i would try the tea light first

then change if you need to
