fondue with tequila

INGREDIENTS

6 tablespoons butter

1 clove garlic, minced

2 small onions, chopped

2 tablespoons all-purpose flour

1 avocado, peeled and pitted

1/2 cup cream

1 cup milk

3 tablespoons lemon juice

2 tablespoons tequila

1/2 cup crumbled cotija cheese

1 pinch salt and pepper to taste

DIRECTIONS

Melt the butter in a skillet over medium heat. Add the onions, and cook until tender, stirring occasionally. Add the garlic, and cook for about a minute. Whisk in the flour with a fork so no lumps form. Cook and stir with the fork until browned. Remove from heat and set aside.

Preheat the oven to 350 degrees F (175 degrees C).

Place the avocado into a blender or food processor, and pour in the milk, cream, lemon juice, salt and pepper. Puree until smooth. Pour into a heat proof bowl or casserole dish, and stir in the onion and garlic mixture.

Bake in the oven for 20 minutes, or until thickened. Stir in the tequila and cheese, and return to the oven for about 5 minutes to melt the cheese. Stir and serve as a fondue.

these are all very good and I hope you try them, you will enjoy them
I have done a chinese style fondue before and it's very good. I marinate my meats, usually beef, chicken, and shrimp.

I use a whole package of onion soup mix, boiling it on the stove first so that it is "screaming" hot. Then pour into my fondue pot. Voila! It's good and not fattening.

I like fondue too. I stay away from oil. What are some good fondue recipes?
My first fondue was with oil.

It was served with cauliflower, mushrooms, cubed beef, and other goodies. After cooking in the oil, you dipped it in garlic butter. That was over 35 years ago. We still do it several times a year.

We went to Vail, CO., a few years ago and found a restaurant that only had fondue. It was several courses long and took about 3-4 hours to enjoy, but it was great! Reason for telling you this is to invite you to try a fondue restaurant for ideas, or better yet check the foodnetwork.com or Epicurious.com. just to name a few. They are both loaded with recipes. OR just type fondue into your search line.

Sorry for the delay. I put "fondue" in my search box and got back over 12 million hits!

I liked the other recipe answers before my answer. They sound good too! I copied them to word and will make cards for them later.

Have fun! We did and do!
