What is a good recipe for chocolate for cake fondue for kids?

What kind of chocolate is best for dipping angel food cake (in a fondue pot) for a kids party? Is there something that can just be melted down, or is there a simple recipe?What is a good recipe for chocolate for cake fondue for kids?
This recipes is tried and true and has been tested so many times that I know it works perfectly every time. The recipe calls for a liqueur, but since you're dealing with children, leave it out and add a little extra vanilla. It's not that the small amount of booze is bad for them, but if they are anything like my 4 year old, they'll say "yuck, what's that?"

This recipe can be made in advance and will keep for 30 days in your refrigerator.

The other nice thing about this recipe is if you have leftovers you can do any one of the following:

FROSTING: for every 1/2 cup of leftover chocolate, whip it with 4 tbl. unsalted butter for a fantastic chocolate buttercream.

TRUFFLES: let fondue cool, then, using a melon baller, scoop it into balls. Dust your hands with unsweetened cocoa powder and shape and coat balls. These make great gifts.

CHOCOLATE FONDUE
1 lb good quality semisweet chocolate (if it's for discerning adults, use valrhona chocolate, otherwise use "chips")
1 cup heavy cream
1 tablespoon vanilla
3 tablespoons Grand Marnier


In a double boiler, melt chocolate and cream. Stir until smooth. Serve.

In my experience, I've seen some liquid high in fat to the chocolate while melting it before putting it into the fondue pot. I have seen cooking oil (corn oil, I think it was) used, but classier places use heavy cream or whipping cream (not whipped) and a little bit of vanilla extract. I prefer that.



Here is the recipe I know:



12 ounce package of quality melting chocolate (The cheapy little rounds probably work all right too. They may not taste as great, but too, the kids may or may not really care. I guess this part is your call)

1 cup heavy cream or whipping cream

1 tsp. vanilla or other flavor extract



Heat the two liquids in the top of a double boiler over low heat. Add the chocolate pieces, stirring until all is melted. When the entire mixture is the same consistency, you may pour it into your fondue pot. Vanilla adds a nice richness to the chocolate flavor (you don't actually taste vanilla in it) but if you want to experiment with other flavors like mint for other occasions, there are probably some great combinations waiting to happen.



If you need more than the 12 ounce of chocolate and cup of milk, I would suggest doing a second batch or half batch in the double boiler after you've poured the first into the pot. It is easier to handle and takes less time in a smaller quantity. You don't want to be standing over the stove all day trying to melt down your 36 ounces of chocolate for the party.
