What stops the chocolate from burning to the bottom of a ceramic fondue pot?

when using a tea light to candle the chocolate starts to melt and then begins to burn how can I stop thisWhat stops the chocolate from burning to the bottom of a ceramic fondue pot?
Why don't you use a double boiler? the temperature of the chocolate will not exceed the temperature of the boiling water below, 212 F or 100 C, so the chocolate will not burn.



if you must use the ceramic pot, stir alot? move the candle away from the pot?
